Grandma Middendorf's "Party Potato Salad"
Always the best dish of the party. Mayonaise haters can't resist it either! Key is to add vinegar mixutre to potatoes while hot so they absorb. Hellmann's brand Mayonnaise is essential.
Ingredients:
4.5 lb regular size Idaho potatoes
4 celery hearts
1-2 onions
30-35 oz Hellmann's Mayonaise
1/2 cup Heinz apple cider vinegar
1/8 cup water
2 tablespoons salt
1 tablespoon sugar
Paprika
Directions:
After potatoes are peeled, cut into 6 to 8 pieces per potato, rinse and boil until fork can enter with ease. Separately, dice celery and onions. In a cup, prepare a mixture of the vinegar, water, salt, and sugar, stirring well to dissolve. Drain boiling potatoes and immediately add 1/2 of the vinegar mixture, gently folding the hot potatoes around for 2 min. Add the chopped vegatables and rest of vinegar mixutre folding again for 4 min. Lastly fold in the mayonaise for 5 min. Chill 4-6 hrs. Sprinkle paprika on top before serving. Enjoy!
Cold with BBQ, slaw and B&M baked beans!
Vinegar may be reduced by 1/8 cup to make more on the bland side.
Prep time: 35 minutes
Serves 10 or more (makes approx 5 lbs.)
