First estimate how much you are going to spend, and how much tip you will leave. So, let's say you are going to spend $40 and plan to leave a 20% tip, which (if my somewhat limited math serves me right) is $8.

Put $8 in $1 bills on the table at the start, and tell the server that that is their tip, and that you will be taking a dollar away for every time you finish a drink that doesn't get refilled within 5 minutes, or every time you are left for more than 10 minutes without food and without an explanation.

Whatever is left at the end is what they get for their tip. Trust me when I say this really helps to focus their mind!

As for the Central Station, I have not had chance to visit yet. I'm kind of biased because I know the owners, but from what I've been hearing around town it is a great place to hang out and drink, but only an average restaurant.
Funny you should say something like that. From what I understand, tip, actually stands for "To Insure Promptness." It was given at the beginning of the meal in it's early days. At least that is what I have heard, if it isn't true, it sure makes a good story.
