Everything that happens good or bad at your business falls on the manager's shoulders. If you have a crappy employee and you allow that person to do what they do to be unprofessional it all falls back on you. The staff will get away with what they are allowed to get away with. I have been to Applebees MANY times and could write pages of the things I see happen there.

There are good servers there and when I have one I let them know that they rock. The thing with running a dining establishment is quality control...which MEANS THE MANAGER CHECKING SH*T. If a steak comes out cooked wrong once blame it on the kitchen. If it happens over and over then it's a quality control issue that goes BACK TO THE MANAGER. Take responsibility for your business, that would be a first step.

If I voice a complaint to the manager and he immediately blames his workers...well right there I know where the problem is...Lack of responsibility and accountability.
