I do take 100% responsibility and accountability for the business that I run. Is it perfect all the time? No. It was pretty much run into the ground when I agreed to come out here and get it back up where it needs to be. Everyday I go to work, sometimes 6 or 7 days...am there for 12 to 16 hours a day, trying every day to do the best that I can do. I have flipped my staff, including my assistant managers. It's a struggle, will it be fixed over night, heck no...but it will get there!

Well good luck...

You do have some staff there that is great....those are the keepers.

What is the business? If the word gets out that you are trying to make it better, maybe we can help.

You bring up an excellent point. I have been in Dodge for nearly 10yrs and all the wait staff is the same. They just keep jumping from one establishment to another. What really needs to happen is to NOT hire the bad wait staff. When another establisment calls to get references, tell the truth. These poor waitresses need to be out of the business. If they need a job, they can work at a convenience store. I have wanted to start a resturant in this town, but what keeps holding me back is who to have serve at it. I hope the next generation has some kids with good work ethics and costumer service. But, I won't hold my breath.

The thing is you can't. By law when you call for reference I think you can just ask if they worked there and a couple other general questions. I don't think they can ask if you have been fired or why. I'm not sure but this is what someone told me you can ask..
Dates of employment, job duties. You can't ask if they got fired but you can ask if they rehireable you can't ask why. You can ask their strengths and area's of opportunities.

I think a lot of the problem is current work ethic with people and alot of the employees in the restaurant business are transient. In most cases it's just a "job" and not a career so there is not much loyalty.

I would disagree that "all the wait staff is the same". THere are some fantastic servers out there but unfortunately they are the exception not the rule.

I know I'm idealistic but although there are people with poor work ethics and whatever it lies on the managers shoulder. HE or she does the HIRING of these people. Second and most important is setting and enforcing standards and being consistant. If the servers are not taught to make their customers priority over EVERYTHING (cell phone calls, personal drama etc) then you have lost right off the bat. I have been here 3 years and have been to applebees MANY times and more often than not the service or food has been not what was expected. Consistency is an important thing in the restaurant business. We may go there and have a great meal with great service one night and get something the opposite the next.

I worked at a restaurant once where the manager was pretty much a Nazi but the employees respected him and we made great tips because of our training and how busy the place was because the service and food was consistently great. One of our managers was on the floor always going around checking with the customers to see if all was going well.
