Found this on a site I go to alot. Don't know if you have used this site but lots and lots of recipies - See if there is anything that you don't use - besides the kitchen sick and perhaps incorporate it into the base recipie you are using - since you feel you are close to the taste.

So you feel comfortable calling somebody at their private home that you are barely a acquantence with?
ANyways this is my suggestions: Make sure your rice has aired out and cooled in a fridge for at least a day, also make sure it is medium grain. bacon grease is good in alot of things but not fried rice, use peanut oil it can stand up to the heat alot better, knock the celery out and add finely chopped carrots, at the end after you have added the egg and chicken back in add some soy sauce while it is hot in the pan and mix it well. I also would to taste add some red pepper flakes.

No I didn't feel comfortable at all.........lol

I have tried for years to make Japanese (Okinawa) fried rice....altered the recipe so many times its crazy.....but I still am missing something...

I have been on every site online and still cannot figure it out... It could be oyster sauce, which I will try if I can't get the recipe from Yoshi....

TK knows her and hopefully can talk her into sharing it.....

Thanks lizard appreciate it..I think I have tried the peanut oil over the years and it does have a good flavor.

I was also going to suggest skipping the bacon grease and using either sesame oil or peanut oil. Letting the rice sit overnight will allow the grains to remain firm and seperate when making the fried rice.
